Favorite Summer Recipes

While I am always down for coffee and cookies, or a big bowl of ice cream, eating healthy is one of my biggest passions in life. Since summer is upon us, I thought it was a perfect time to share some of my favorite recipes with you guys. Summer is probably my favorite season when it comes to food, because along with the good weather and sunny skies comes fresh and local produce! Hope you enjoy the recipes!



Green Orange Julius: This smoothie is hands down the best green smoothie recipe I have ever tried! It's super simple to make and equally delicious. The best part about this smoothie is that even though it's green and good for you, you don't feel like you're drinking a smoothie with spinach! I basically follow the recipe linked here with the exception that I use almond milk instead of dairy milk, and sometimes I use whole oranges instead of juice if we happen to have them!

Grilled Romaine Salad: I know what you're thinking..grilled romaine? Well trust me, it's delicious! I was skeptical of this recipe when my mom told me what she was making for dinner one night, but one bite of this salad and I was hooked! It's literally so simple, but it tastes sooo good, especially with corn, avocado, and cherry tomatoes on it! The recipe I follow is from the Floating Kitchen Blog, with the exception of occasionally switching up the dressing. The other dressing we make for it has mayonnaise, parsley, lemon juice, water, garlic, and salt/pepper. I usually just make single serve batches of the dressing so I don't bother measuring everything out. I just continue adding small amounts of ingredients until it tastes how I like it... I tend to add a lot of lemon juice to mine because I like it to have a slight tang!

Mango-Orange Popsicles: This final recipe combines two of my very favorite things...mangos and popsicles! To me, there is nothing better than grabbing a popsicle after spending a long day in the sun, especially when they are homemade! These popsicles are super easy to make and only take 2 ingredients! All I did to make these was blend frozen mangos and orange juice together in a blender until it was a thin consistency. After that I poured the mix into the popsicle molds and waited for them to freeze! They are super simple, but I find them to be really refreshing. You could also mix them up a little by adding in different fruits to the popsicle like raspberries or blueberries!
